Issues upgrading SP from 2.5.0 to 2.5.3

Hi all, when updating our Shibboleth SP install from 2.5.0 -> 2.5.3
(including the Heartbleed patch) in our Staging environment, we had some
issues on the sites after restarting the server. 

Site 1: A redirect loop (IdP -> SP -> IdP etc.) after authenticating at the
IdP.
Site 2: "Unspecified Error" appeared in the browser window.
Site 3: Instantly came back up, no problems (this one is the default IIS
site, and is the site configured in the Shibboleth.xml ApplicationDefaults,
the other two sites are configured in the ApplicationOverrides, if that's
helpful).

Weirdly, both problems went away the following morning without any
interaction on my part. I'm a bit nervous about updating our Production
environment given I don't know what went wrong or how it was corrected.

I guess my questions are:
- Is it possible to rollback/downgrade to 2.5.0 after installing 2.5.3, in
case this happens again? Is there more to it than restoring the opt folder
from 2.5.0 and restarting?
- Any idea what could have gone wrong, so I can keep an eye out when
updating the Production environment?

Looking at the logs:

native.log (this is around the time of the "Unspecified error")

There are events in the Windows Event viewer at the time of the "Unspecified
error", and 3 events from the next morning when the problem disappeared,
with the text: "Extension mode startup not possible, is the DLL loaded as a
filter?"
