Shibboleth iDP - Metadata Won't Load

The only sense in which the IdP shows "loaded metadata" is the mdquery command line tool, not the status page. The status shows the configured metadata sources if that's what you mean.

A 500 from the status endpoint generally means the IdP's not running at all. Only you can debug a startup issue, nobody else has the logs to do so.

If it is running, there'd still be logging explaining why the 500 occurred, but if it's not starting up at all only Jetty logging is probably going to tell you anything.
