The SP runs on any vhosts you operate and there's nothing unusual about that apart from having to ensure the IdP has knowledge of all the possible response endpoints on each vhost. The SP issues requests containing the proper endpoint URL to return to, it doesn't have to be told to do that.

Overrides have nothing to do with that capability. There are a very small set of cases that overrides address and that isn't one of them.

"How" is that you follow the documentation, nothing more or less. With all due apologies given your email domain, you "just do it". If it's not working, it's not because there isn't an override.
