We don't do "guides", we just document the things necessary to document. The documentation has a top level page that outlines the primary tasks that have to be done, vs. the more advanced things that typically can wait. [1]

Without a specific question, there really is no way to answer. You need metadata for all SPs. If you can't get it, you have to create it. Learning what it is and what's in it relies on a knowledge of the SAML standard and review of the many examples of metadata that are around. We have pages in the wiki that cover metadata at a high level in the CONCEPT space.
