Thanks for the advice all. This server isn't to replace our production IdP, it is just an internal proof of concept. However when we do replace our ShibV2 I'll certainly bear all of this in mind.
I'll look at the UK fed test SP too as this may suit our needs more than testshib.

Yes, the UK federation does have a Test SP, details at https://www.ukfederation.org.uk/content/Documents/TestSP
Our v2 IdP installation documentation included a note about testshib, although our v3 IdP installation page does not mention it. "Installation and configuration of Shibboleth IdP v3 software" is at https://www.ukfederation.org.uk/content/Documents/Setup3IdP
