New IdPv3 installation, redirecting to server hostname

Hi all,
Running version 3.3 of Shibboleth IdP, with Jetty 9.3 on CentOS 7.

We've gone through the installation several times now thinking we've done something wrong along the way, but we can't spot it anywhere. When we attempt to test our IdP using testshib we're getting redirected to the IdP server's hostname. We've grepped the entire server looking for the hostname string, or variable, but we can't find it anywhere. When running through the Shibboleth installation we only ever declared the public DNS name of the service, rather than the hostname.

Can anyone point me in the direction of where this hostname is coming from please?
