iOS authenticating to MS Exchange server with Shib IdP ?

What mail system? Unless it's Office 365, I think the answer is "if you want to do this, you'll be building a mail proxy yourself". Office 365 operates a couple of mail proxies, one for WS-Trust (used with ADFS) and one for ECP (used with Shibboleth). The latter was forced into existence by customer pressure, I think largely from Washington.
