Need userPrincipalName attribute with the domain format

What exact attribtue defintion are using for that?

A type of "Simple" shouldn't do that (as that would also remove the
domain part off an email address, which I suppose is not happening for
you).
Also there's Prescoped if you wanted to use a scoped string encoder.
