After some more reading, I suppose I could add another option of using a regexp="true" and constructing a valid regex in my scope definition in the metadata.

Sure. I see 3 ways forward:
* Add a second scope (costs you nothing)
* Give up on having identical values for email address and ePPN
  (that probably amounts to "Do nothing" with your status quo?)
* Change all students' email address ;)
