When I say generic error message, I mean generic.
Server Error: We apologize but something's gone wrong.
As helpful as that is, they've not been able to tell me anything beyond
that.
We're not encrypting, but they do request that we sign and I do believe
we're providing the NameID they're looking for. The only feedback I've
gotten so far was them asking to confirm that the cert I provided them
matches what we're using to sign (which it does).

Or SAML apparently, or they could debug it for you.

How generic is the message?
The usual things to do are to make sure encryption is off, and to find out
ahead of time what exactly they're looking for in the NameID, since that's
most likely what they want.
