Mark,

You may find InCommon's old Shibboleth installfest guide(for CentOS 5.1) useful.  It is out of date and no longer publicly maintained and you'll need to interpret it a bit -- e.g. an LDAP server -- since you're outside the workshop setting.  However, they're very linear and reasonably complete.

If you'd like, I can print a PDF or Word document or whatever and mail it over to you.  I'd sooner not have more unsupported old documentation floating around in the wild for obvious reasons.
