Yes. The metadata should never be used without modification and additional
maintenance anyway, and the certificate doesn't matter unless you're using
it for back channel TLS, in which case you can just regenerate one with
the same key and whatever name you want.

The entityID in relying-party.xml is just a setting, change it to whatever
it should be.
