This is very do able..
I believe you can use SVN right inside the config locations.

I use git locally to sync my config files in step on multiple nodes just
by setting up the config directory as a repository and pulling to my idp
nodes.. from the remote location.
As to what files.. this is completely up to you. You will be changing
some files more than others but its really up to you what you want to
track in your vcs of choice.
