I'm not aware of any changes to be made to shibboleth2.xml in order to
enable logging (but then I don't have any SPs on MS-IIS anymore).

The Shibboleth SP shouldn't ever be able to crash a server.
Or did you mean other application protected by that same SP are
wotking fine? No idea how that would be possible,
