capturing a sample SAML assertion

I have an SP we are looking to integrate with who doesn't just exclusively
work with shibb for SSO though they do support it. They have asked for a
sample SAML assertion from our SSO environment as part of the peering
process. Is there a way to turn up the logging on the IdP such that the
actual SAML assertion may be captured? if not from an IdP logging
perspective, what other ways might I intercept a SAML assertion from our
shibb environment?
