If they can't support being a service provider then Shibboleth and SAML is of no use to you. They must be service providers.

Well, roughly, you have to deploy an IdP somewhere (if you mean that
you're running the IdP), install an SP on each server hosting a site,
configure them, and exchange SAML metadata between them.
And then you have to modify the applications to stop doing authentication.
That part is not something that can be described fully without knowing
what they are or what they do. There could be large changes or minimal
ones. There are session management considerations in some cases. It just
depends.
