Each application or framework will need to be changed (sometimes this
will require configuration, sometimes code changes or intermediary
protocols) and the process is different for every application.
Also note that the most common SAML profiles are for Web(SSO) only, so
depending on what you mean with "Mail Server" this either has nothing
to do with SAML (e.g. for direct SMTP, IMAP access with a mail user
agent) or, for the case of webmail access, requires careful
consideration and something like the things mentioned at

That is, unless something like http://project-moonshot.org/faq takes
over the world.
