Which version of Jetty to use for v3

The "right" version is the latest one they release, like most projects. 
They have an announce list, etc, like Tomcat.

But a link to the "latest" V9 version seems to be:

http://download.eclipse.org/jetty/stable-9/dist/

Isn't that what you're looking for?

Not exactly. The "quick install" for Windows will have Jetty and the 
"regular distribution" will not. They're not Windows and Unix. The regular 
distribution is what I would advise anybody running a production IdP to 
use, on any platform.

The embedded version is for people doing testing or prototyping IMHO.
