SP setup: Frontend NGINX, backend Apache w/ shibd ?

Why would you need two web servers in the first place? I.e., why not
do it all with only httpd (or only nginx) -- especially since the
Shibboleth SP can be used from both httpd as well as nginx.

I.e., if you're running (and proxying to) httpd only in order to use
the Shib SP from nginx you should probably use the SP's nginx support
as intended.
