IIS setup

I'm trying to setup the SP to host a site that I want protected by SAML - it'll be a PHP webapp.
Using this page:

I've modified one of the RequestMapper lines for IIS:
<Host name="sitename.ourdomain.com" authType="shibboleth" requireSession="true" />
(I want the entire webapp protected)
Restarted shibd, and IIS - and it's still not forcing a shibboleth login. Just showing my index.html page.
The ApplicationDefaults section has been populated, including with our Azure AD IdP details for the application.
Eventually I want this to be able to host multiple PHP webapps, each with a different SP ID and will need its own Azure IdP metadata - but getting one site working first is the first goal.
