Attribute mapping and policy

Hi I am very new to Shibboleth or any SAML SSO configurations.
I have a Reverse Proxy and application server. I have been able to setup all
redirects to authenticate to Azure but I am completely lost on the attribute
map and policy. I see the NameID in the shibd.log but I am not sure what I
need to do to get the email to populate on the application authentication.

I really hope I explained this correctly.
