You didn't mention them at all in your post, that's why I mentioned
them.

Again, use the aacli! That takes care of your "everything else is
encrypted" and logging issues.

Also, if the IDP side is not your focus (right now, or ever) might as
well test with an external IDP even now, e.g. https://samltest.id/
