Configuring external AssertionConsumerService, and documentation for protocols.xml

I'm trying to configure a shibboleth SP3 server to integrate our application to our enterprise SAML2 SSO.

I'm implementing a separate endpoint for the assertion consumer service, in an application behind the same domain.
I need to configure the assertion consumer service url to match what's configured in the Azure IdP.

I think I finally figured out that this can be done using a protocols.xml file.
I have found no documentation on this file on the wiki or by searchin google.
The best I've got is an example from a public gitlab repo: https://code.stanford.edu/saml/shibboleth-sp/-/blob/567eb2b3d28293774f7d8e35bc8bf1ae4556ad0c/protocols.xml .

This is obviously not sufficient.

Is there documentation on the schema of this file, and is it possible to specify a URL for an assertion consumer service that is not part of the shibboleth url namespace?
