Unable to provide claims to SP for openID userinfo endpoint

Hello,
I'm not clear about how do I actually release the claims (email, name) when SP tries to get it from userinfo endpoint.
I came across a way to get it by an API during the process but is there a simpler way to provide it ? May be using a properties where I can mention it.
Also, how does this come out to be user-specific if the same endpoint is hit by SP?
I'm pretty new to openID connect so any help/explanation would be appreciated.
