No Logging for IdP4.0.0

Hi,

we have an existing and working instance of a Shibboleth IdP (Version 3.3.3) on an Ubuntu 18.04 with tomcat8 and openjdk8 (version is called 1.8.0_242). Everything is working fine there. Right now, we are trying to setup a new instance on a new server using the same Ubuntu 18.04, IdP 4.0.0 (latest), tomcat9 (latest) and openjdk 11.0.6 (latest). 

Despite following the Installation manual, we don't get any log files from the IdP at all. In the old instance, everything is working fine, logfiles are created in /opt/shibboleth-idp/logs, but there is nothing in the new setup. Meanwhile, we tried all possible version combinations of tomcat and the IdP, and didn't get any log files at all.
We also checked the file and directory permissions, no issue here.

The container is running, we configured everything and it's working with only minor issues, but they are impossible to debug without any logging.
We also tried to use Jetty (9.4) instead of Tomcat, but no still no logging/logfiles.

To test whether this is a configuration error we cloned the old (working) /opt/shibboleth-idp/ directory onto the new machine. The setup worked, the IdP is running, but still no log files.

We would greatly appreciate any help or ideas on how to get our logging enabled.
