We don't have documentation that is targeted at any specific audience of people using the software.
 
If you're looking for deployment guidance on SAML that is of fairly direct relevance to the kinds of issues a publisher will face, I would direct you to the draft at [1]. If you're looking for something more non-technical, I would suggest one of the federations (InCommon, etc.) that work with publishers at a higher level.
