Question about use of ApplicationOverride

That doesn't really parse, attribute release is an IdP consideration and never sees overrides as they are invisible to an IdP for policy purposes. You must mean something else by it, but without knowing what, it's difficult to say for certain overrides are a necessary approach. I'd doubt it.

As far as metadata, it is what it is, as Nate said. Using path or vhost overrides necessitates additional ACS endpoints in metadata, that's simply a consequence of overrides or of vhosting even without overrides.
