The SystemRequirements page in the Shib wiki states the "recommended
container implementation is Jetty". But also that "[only] Tomcat 8+
and Jetty 9.2+ are officially supported by the project at this time".

Note that support from the Apache foundation "will end on 30 June
2018", i.e. you have over half a year to try 8.5 (which works fine
with the Shib IDP, AFAICT) instead of 8.0.
I didn't have to change any of the things the Shib wiki documents for
8.0 when using 8.5. So other than potential changes wrt TLS
configuration (which the Shib wiki never covered, modulo backchannel)
all of it applies to Tomcat 8.5 just the same.
