Minor supporting info - Instructure (with the Canvas product) do now seem to be doing the right thing, as described at:
  https://spaces.internet2.edu/display/InCFederation/SP+Cert+Migration
and told me that they keep the old certificate in place until the _next_ rollover, e.g. two years.
