Where is java_home detected from by the installer?

Where does JAVA_HOME get detected from by the installer?
I updated java (removed old version, installed new one) on SLES 11, went fine, then ran the Shibboleth upgrade script and it complained that the path for java_home didn't work. It still has the old version in.
I've edited /etc/profile.local to have the correct path (someone advised putting /usr/java/latest, which links to it automatically) but it still is asking for the old version specifically.
I can't see from the code where it's being a detected. A reboot doesn't seem to have fixed it either.
