Your integration is your integration. What is it you want to do that you don't know how to make the IdP do? Focusing on the SP is not how you do this. You focus on requirements and configure the IdP to satisfy them, so the first thing you need are the requirements.

With most SPs, that's simply what attributes and/or NameID requirements are involved.

Google, as far as I know, just requires a NameID of any Format that matches the IDs you provision. So what you need to do is go read the documentation on supplying custom NameIDs to SPs in the documentation. That's it.

You should NOT use the "unspecified" NameID Format.

You should NOT touch relying-party.xml. Not unless you have a reason to.
