Upgrade Shibboleth SP

Maybe I misunderstood: You want to keep the system on Debian 7
("Wheezy", the previous stable release, with the SP v2.4.3) but
upgrade the Shib SP to what's in wheezy-backports (SP v2.5.3)?

Well, then you install the SP package from backports, as usual:
https://backports.debian.org/Instructions/
There is nothing specific or unusual about Shibboleth here, so you'd
do it like with any other Debian backports package.
