Source Values for Custom NameID Formats

In the Shibboleth documentation at

https://wiki.shibboleth.net/confluence/display/IDP30/CustomNameIDGenerationConfiguration

there are two attributeSourceIds presented in the SAML 2.0 E-Mail Format
Example in Item 4 under General Procedure.  Assuming that 'mail' and
'othermail' have different values, how is either value chosen to be
released in the NameID Subject?
