If you're the SAML Service Provider (i.e., the one with the protected
resources, to be accessed by people from other organizations) then the
Shibboleth SP software should be integrated on existing servers
housing/serving any existing resources.

It's possible and the default mode. Specifics depend on what you want,
which may be something the software wasn't designed for. That happens
regularly with people trying to push a multiple-silos kind of
approach, instead of making the exact same resource available to
different organisations.
