I was wrong. The metadata provided to me initially had painfully vague
entity ID of simply "PingOne." On further testing, we started seeing
requests to our IdP from the following entity ID:

http://pingone.com/c46de016-9d5f-4f7c-9c19-a349c5c3f10d

That sure looks like a GUID on there that would uniquely identify our
Echo360 service.

Thanks to Nick Roy and folks at PingOne for confirming privately that the
entity ID is indeed unique to our tenant, which I understand is Echo360 in
this case. They also described how to get the SP metadata that includes the
unique entity ID we need. Pretty sure we're good to go.
