FW: Find all the service provider URL

Would there be any problem if I create a new log file in logs folder that outputs just the relyingPartyId?

Only of those where connections were made during the period covered in your log files, and some may not even exist anymore (but did when the connection as made).  There may be more, the upper bound being the set of entityIDs about which the IDP has metadata (assuming you restrict the IDP to federate with SPs it has metadata for, which is the default).
So what method will yield "correct" or "desirable" results depends on the type of question you're trying to answer.
