If you can get Java and a servlet container running there then the IDP
installation and configuration documentation should apply just the
same.

What's possible is using the Shibboleth IDP software as a SAML 2.0
Identity Provider, and the Shibboleth SP software as a SAML 2.0
Service Provider. Whether and how SAML 2.0 IDPs and SPs fit your
intended deployment is impossible to say based on the above, but
should be easy enough for you to determine from general documentation
about SAML.
