IdP 3.1.0.1 reinstall & Jetty

My intention is to go as "vanilla" as possible, so I'll just use the
default installation folder.
It may be worth a note in the documentation that Jetty is hardcoded to go
in C:\Program Files (x86)\Shibboleth\Jetty.

Jetty is, not the IdP. Jetty is a detail that you don't touch. If you want
to touch it, you don't want to install it from this package, you want to
install it yourself and maintain it separately.
