It’s still running the v2 IdP, although I think Kevin is in the process of upgrading it.  We don’t have DEBUG-level logging for org.opensaml just because that generates such enormously huge logs that generally don’t have the critical information for most deployment problems.

Last I looked the IDP was running on DEBUG also (not sure whether for
org.opensaml too), so chances are you'd find the Assertion in the
Testshib IDP's logs as well as in the Testshib SP's.
