The Shibboleth SP should be able to interoperate with many IDP
implementations.

As far as the Shibboleth SP is concerned the official documentation
applies. For the integration with specific application or services it
depends. For some there's a contributed documentation in the
Shibboleth wiki.
You also wouldn't expect PeopleSoft documentation from the Apache
httpd documentation, though.
