I got the impression we have to offload it for TMG, and that it needs a certificate to have an https listener - which makes sense.
I'm hopeful now Andi mentions he's managed to dodge the offloading bit, and have contacted him off list to see if we can replicate the end-to-end setup here.
If it's possible, I hope it's easier than moving the server away from TMG or having to go through all our subscribed SPs to see if they'll just do SAML2 or configure message signing for some or all of them.

You can't do that (and if you can, you really shouldn't). SPs using the back channel mostly rely on client authentication and that has to be end to end in most cases.
If you want to offload SSL, you really need to either get rid of the back channel or get any SPs to switch to message signing to authenticate requests.
