Thanks Scott. I realise now that I had done exactly that in previous
deployments, and that it's documented here:
https://wiki.shibboleth.net/confluence/display/SHIB2/NativeSPAttributeExtractor#NativeSPAttributeExtractor-ChildElements.1

I guess what was throwing me off was this page, which makes no mention of
nameFormat:
https://wiki.shibboleth.net/confluence/display/SHIB2/NativeSPAddAttribute

Might it be worth mentioning there?
