It should if it has an entry for their attribute name in the
attribute-map.xml (cf. Shib SP docs).
But either way, testshib will give you access to its log files, IIRC,
so you should see what was mapped and what was discarded.

Without logs maybe not. With logs I don't think you'll miss much.
OTOH setting up an SP on a supported platform only takes a couple of
minutes (if you've done this before or follow the GettingStarted page)
so most people just run their own, I guess.
Note that you could also turn off encryption for SAML2 WebSSO and grab
all the SAML from the bowser (e.g. using Olav's SAML tracer), but that
won't give you that warm fuzzy feeling of the attributes being
recieved "correctly".
