What Paul said. (You're confusing yourself by running the IdP at
DEBUG. Also the idp-audit.log has all transmitted attributes easily
available).
But you don't even have to look at the IdP -- if you turn up logging
(DEBUG) at the SP you'll see the complete unencrypted, decoded
attribute assertion, if there was one.

And the SP logs will tell you whether any attributes were recieved or
discard or whatever. So look there.
