You can't just change it on a dime unless you're planning a flag day when
things break until you've managed to track down anybody not using the
metadata properly. Transitioning a hostname is like changing endpoints in
any other way, you have to plan it very carefully and most likely
dual-deploy for compatibility for a while until everything is cleaned up.

But only so much harm is likely as long as both sets of endpoints work.

Changing an entityID is a very tricky proposition unless you have pretty
detailed knowledge of every SP that might be doing unfortunate things with
it. It's not as disruptive as changing an SP name, but it's still best
avoided.
