Removing announcement of those features from your metadata (and
republishing it to any relying parties) will suffice -- for all
implementations using metadata for that.
If you gave SAML1 endpoints to relying parties via other means and
want to break the use of those, disabling support for those profiles
for the Default (and any custom) relying parties (in
conf/relying-party.xml) should suffice.
I don't think you'll need to touch anthing else (e.g. handler.xml),
