For attributes that are mapped in attribute-map.xml, this is what 
/Shibboleth.sso/Session gives you if you turn on showAttributeValues or 
whatever the option is called.  Then you can look in your shibd.log for 
unmapped attribute warnings to find the attributes that are unmapped.

(which is not to say it wouldn't be handy to have that all in one place 
and programmatically accessible, so filing an enhancement request might 
still be a good idea)
