Removing/fixing shibboleth stats in Apache logs

Thanks Brent,

I edited REMOTE_USER to only record one of the default three values. 
Looking at the logs, that makes the username more straightforward in 
appearance, and I hope that does the trick. It was an intermittent 
problem not caused by all Shibboleth logins, and I haven't worked out 
yet what 'user name' was the one that caused the problem.
