The list of the specifications Shibboleth adheres to is published in the wiki. You won't get very far with that list, as they are not widely implemented, but that is the set.

If you want minimal compatibility that includes some degree of changing defaults, and digging into the software on your side, then you can stick with specific statements about SAML conformance.
