I'd start by checking out the documentation at

There's quite a bit of conceptual material which you'd probably want
to go through at some point:

For your specific question: From the start page of the documetatnon
included above  there's a link "Configure":
https://wiki.shibboleth.net/confluence/display/SHIB2/Configuration
and from there on the lift side there's a block of links specific to
the IdP. Try "Define a New atttribute" or "Define a new Attribute
Filter".
The former is for telling the IdP where to get the data and how to
encode it on-the-wire, the latter is for telling the IdP to whom to
send that data. From what you're saying above it's not possible to
tell which part you'd need to look at, so try both.
